Preparing for Thanksgiving in Pennsylvania

It's a little early to be thinking too seriously about Thanksgiving, but I did buy a crookneck squash to make the pumpkin "puree" that I froze. When the times comes, I'll just add the spices, eggs, and whatnot, pour it all into the pie shells, and pop them in the oven. As for the rest of the meal, I'll buy my turkey from a local organic Mennonite farmer. I also intend to have scalloped potatoes that I grew myself, and a dried corn souffle using local corn. The only thing I can think of that won't be local is cranberry sauce. As far as I know, they don't grow here in Pennsylvania.
